Few today know what football is. The name has fallen into disuse, even locally, and many confuse it with a common caciocavallo. Few dairies in Gravina still produce it and farms that guarantee constant production of quality milk suitable for raw processing are rare.
The Presidium wants to give new impetus to the production of the typical Gravinese Pallone, which recently had significantly declined in favor of that of Matera, while at the same time encouraging the processing of raw milk and the use of native ferments. Only in this way can cheeses suitable for prolonged maturation be obtained, while today there is a tendency to offer the market a Pallone to be consumed young, less characterized from an organoleptic point of view. A Pallone aged at least three months is also the means to give value to the milk production of Alta Murgia, which still boasts semi-wild herds, unique pastures for the variety and richness of herbs, and ancient traditions.
